Buckwheat Flakes Chocolate Chips Cookies

Ingredients

  • 1/4 cup of melted butter
  • 1/4 cup of coconut oil
  • 2/3 cup of maple syrup
  • 1 egg
  • 1/2 teaspoon of vanilla
  • 1/4 cup of coconut flour
  • 1/2 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 1 1/2 teaspoon of buckwheat flakes
  • 1/2 cup of chocolate chips
  • 1/4 cup of nuts (Almonds, pecans, etc.)

Preparation

  • 1. Preheat the oven at 175°C (350°F).
  • 2. In a bowl, beat butter, maple syrup, oil, egg and vanilla until smooth.
  • 3. In another bowl, sift all purpose flour mix. Add coconut flour, baking soda, salt, buckwheat flakes and chocolate chips.
  • 4. Incorporate dry mixture into wet mixture. Mix with your hands. Do little balls and put them on a buttered baking pan.
  • 5. Cook in the oven for about 12 to 15 minutes or until the cookies are well cooked.

  • Only use maple syrup. If you use brown sugar, the mixture will be too dry.
