Blueberry Banana Muffins with Brown Rice Flour

Ingredients

  • ¾ cup of sugar
  • 1/3 cup of butter
  • 2 eggs
  • 3 to 4 ripe bananas, mashed
  • 1/3 cup of water
  • 2/3 cup of chickpea flour
  • 1 tsp. of baking soda
  • ½ tsp. of baking powder
  • ½ tsp. of salt
  • 1 cup of blueberries

Preparation

  • 1. Preheat the oven to 180? (350°F)
  • 2. In a bowl, mix together sugar, butter and eggs.
  • 3. Add bananes and water and mix until smooth
  • 4. In another bowl, mix brown rice flour, chickpea flour, baking soda, baking powder and salt.
  • 5. Add the dry ingredients to the banana mixture.
  • 6. Delicately incorporate the blueberries.
  • 7. Pour the batter into the muffin pan.
  • 8. Bake 20 to 25 minutes.
