2/3 cups of chickpea flour
1 tsp. of curry
1 tsp. of ginger
1 garlic clove, grated
1 tsp. of salt
Oil (Use an oil or fat with a high smoke-point to prevent burning)
- Put the chickpea flour in a bowl and add curry powder, coriander, ginger, salt and garlic.
- Add water until you have a paste consistency.
- Dip a few vegetable slices at a time into the batter and deep-fry in hot oil till they turn brown and crisp.
- When done, put them on a rack and let it cool down.
