Ingredients

2/3 cups of chickpea flour
Potato slices
Eggplant slices
Onion slices
Fresh coriander
1 tsp. of curry
1 tsp. of ginger
1 garlic clove, grated
1 tsp. of salt
Water
Oil (Use an oil or fat with a high smoke-point to prevent burning)

Directions

  1. Put the chickpea flour in a bowl and add curry powder, coriander, ginger, salt and garlic.
  2. Add water until you have a paste consistency.
  3. Dip a few vegetable slices at a time into the batter and deep-fry in hot oil till they turn brown and crisp.
  4. When done, put them on a rack and let it cool down.
