Ingredients
- 1/2 cup Cuisine Soleil coconut flour
- 1/4 cup white sugar
- 1 pinch salt
- 3/4 cup unsalted butter room temperature
- 10 ml vanilla
- 75 ml ice water
- Jam of your choice
- Decorative candy
- Homemade or commercial frosting
Preparation
- 1. Mix together the all-purpose flour, sugar, salt, and butter.
- 2. Once all the dry ingredients have been absorbed by the butter, add the vanilla and ice water. Mix until you get a nice dough.
- 3. Shape the dough into a ball and refrigerate for a maximum of 5 to 10 minutes.
- 4. On parchment paper, sprinkle a portion with the coconut flour.
- 5. With a floured rolling pin, roll out the dough, turning it regularly so that it does not stick to your work surface or parchment paper. If you notice that the dough seems to want to start sticking, add some coconut flour. Do this until your dough is about 5mm thick.
- 6. Using a rotary pizza cutter, cut the dough into rectangles 8cm wide by 12cm high.
- 7. Place the first 4 rectangles on your cookie sheet and spread jam of your choice on these 4 rectangles. It is important not to put it too close to the sides otherwise it will be difficult to make the dough stick which will be added on top.
- 8. Then cut another 4 rectangles of the same size. If you need to take cut scraps to make a ball again and start over steps 5 and 6, that will work just fine too.
- 9. Add the jam on top and using a fork, go around each rectangle, crushing the dough so that it sticks to the one below. If you want to have straight edges, with the pizza cutter, just cut the edge slightly so that it is straight.
- 10. Bake for 30 minutes at 325F. The sides should be lightly browned.
- 11. Let cool completely before adding the frosting of your choice (either homemade or grocery store-bought). Sprinkle with decorative candies as desired.
