  • 1. Pour 50ml cup of warm water (38-40C) into a small warmed bowl and add the yeast and 1/2 tsp. of sugar. Let stand for 10-15 minutes or until you see the mixture have doubled in size.
  • 2. Sift the flour twice, then measure again.
  • 3. In the bowl of a stand mixer, whisk the eggs, oil and remaining water (150ml).
  • 4. Add the flour, brown sugar, baking powder and mix for about 2-3 minutes until the mixture is smooth.
  • 5.Next, add the salt and apple vinegar and mix for 5 minutes. The batter will be quite thick.
  • 6. Pour into a greased 9x5-inch loaf pan.
  • 7. Raise twice (this can vary between 1h45 minutes to 2h30 minutes) away from drafts. (An effective method will be to place the bread in the oven turned off with a large pot of boiling water).
  • 8. Remove the pot, leave the bread in the oven and heat it to 350° F.
  • 9. Bake for 1 hour.
