Ingredients

  • 1 1/4 gluten-free rolled oats
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 eggs
  • 1/2 cup margarine
  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • 1/2 tbsp vanilla
  • 3/4 cup chocolate chunks

Preparation

  • 1. Mix together the flour, oats, baking powder, baking soda, and salt. Set aside.
  • 2. Whisk together the eggs, margarine, brown sugar, sugar and vanilla.
  • 3. Mix together the dry and liquid ingredients to obtain a homogeneous texture.
  • 4. Using a spoon, place a small amount of the mixture on a cookie sheet, spacing each patty about 2 inches apart since each patty will double its width as it cooks.
  • 5. Chop chocolate pallets into small pieces and spread over each of the cakes.
  • 6. Heat the oven to 300F and bake for about 12 minutes.
