Vegan Buckwheat Pancakes

Ingredients
2 cups of
buckwheat flour
¼ teaspoon of salt
¼ teaspoon of gluten-free baking powder
2 ½ cups of water or almond milk
One banana, mashed (optional)
Preparation
1. In a bowl, mix all the ingredients.
2. Let the batter rest for 30 minutes. Add water or almond milk if the mixture is too thick.
3. Cook the pancakes in a well-oiled, hot skillet.
