Oatmeal, chocolate chip and cashew cake
Ingredients
1 1/4 gluten-free rolled oats
1 c. teaspoon baking powder
1/2 c. teaspoon baking soda
1/2 c. teaspoon salt
2 eggs
1/2 cup margarine
3/4 cup brown sugar
1/2 c. tablespoon vanilla
3/4 cup chocolate chips
1/2 cup lightly chopped salted cashews
Preparation
1. Mix together the flour, oats, baking powder, baking soda, and salt. Set aside.
2. Whisk together the eggs, margarine, brown sugar and vanilla.
3. Mix together the dry and liquid ingredients to obtain a homogeneous texture.
4. Add the chocolate chips and mix.
5. Using a spoon, place a small amount of the mixture on a cookie sheet, spacing each patty about 2 inches apart since each patty will double its width as it cooks.
6. Flatten each patty to sprinkle the chopped cashews.
7. Heat the oven to 300F and bake for about 20 minutes.
