Moist chocolate cake

Ingredients

  • 1 tbsp. baking powder
  • 1 pinch salt
  • 2 eggs
  • 1/4 cup margarine
  • 1 tbsp. vanilla
  • 1/2 cup maple syrup
  • 1/4 cup coconut sugar
  • 1 cup whipping cream (vegetable or cow's)
  • 1 1/2 cups chocolate chips

Preparation

  • 1. Mix together the all-purpose flour, baking powder and salt.
  • 2. In another bowl, combine the maple syrup, eggs, vanilla, margarine and coconut sugar.
  • 3. Melt the chocolate chips in a double boiler.
  • 4. Mix together the liquid mixture with the melted chocolate.
  • 5. Add the dry ingredients to the previously obtained mixture.
  • 6. Whip the cream with an electric mixer until stiff peaks form.
  • 7. Using a spatula, add the whipped cream to the mixture, in a plian pattern.
  • 8. Pour into a buttered and floured 5 x 9-inch pan.
  • 9. Bake at 375F for 1 hour (Confirm if the center is cooked through. If not, add 5-minute slices of cooking time.)
  • 10. Let cool before removing from the pan.
