Date and coconut squares

  • Date puree
  • 1. Cook the dates and 1/2 cup of water over medium heat.
  • 2. Use a potato masher to mash the dates coarsely.
  • 3. Set aside and let cool.
  • Mixing
  • 1. Mix together the all-purpose flour, hemp flour, baking powder, cocoa, sunflower seeds, flaxseed, and salt.
  • 2. In another bowl, combine the eggs, sugar, oil, vanilla, 2/3 water and cooled date puree.
  • 3. Add the liquid ingredient mixture to the dry ingredient mixture and mix.
  • 4. Pour into an 8" X 8" pan.
  • Bake for about 50 minutes at 350F but it's always advisable to check if the inside of the mixture is cooked through!
