Oat-honey-pecan patties

Ingredients

  • 3/4 cup quick-cooking rolled oats
  • 2 tbsp baking powder
  • 1 pinch of salt
  • 1/8 cup black chia seeds
  • 1/2 cup sunflower seeds, ground to powder
  • 3/4 cup lightly crushed pecans
  • 4 eggs
  • 1/2 cup margarine
  • 1/2 cup honey
  • 1tbsp. vanilla
  • 1/2 cup milk (plant-based, lactose-free, or cow's milk)

Preparation

  • 1. Mix together the protein all-purpose flour, coconut flour, rolled oats, baking powder, salt, black chia, sunflower seed powder, and crushed pecans.
  • 2. In a separate bowl, combine the eggs, margarine, vanilla, honey and milk.
  • 3. Add the liquid ingredient mixture to the dry ingredient mixture.
  • 4. Place the mixture on a cookie sheet to make about 25 patties and flatten each patty so that they are all the same height.
  • You can sprinkle your patties with large sugar crystals for a little sweet addition!
  • Bake for about 13 minutes at 375F or until the top is lightly browned.
