Oat-Chocolate Chip-Coconut Patties

Ingredients

  • 3/4 cup quick-cooking rolled oats
  • 2 tbsp baking powder
  • 1 pinch of salt
  • 1/8 cup black chia seeds
  • 1/2 cup sunflower seeds, ground to powder
  • 1/2 cup coconut
  • 4 eggs
  • 1/2 cup margarine
  • 3/4 cup maple syrup
  • 2tbsp. vanilla
  • 1/2 cup milk
  • 1 bag of mini white chocolate chips (this can be another kind of chips) or about 1 1/4 mini chips

Preparation

  • 1. Mix together the protein all-purpose flour, coconut flour, rolled oats, baking powder, salt, black chia, sunflower seed powder, and shredded coconut.
  • 2. In another bowl, combine the eggs, margarine, vanilla, maple syrup and milk.
  • 3. Add the liquid ingredient mixture to the dry ingredient mixture.
  • 4. Once the mixture is homogeneous, add the chocolate chips and mix until the chips are well distributed in the mixture.
  • 5. Place the mixture on a cookie sheet to make about 25 patties and flatten each of your patties so that they are all the same height. Bake for about 20-25 minutes at 375F or until the top is lightly browned.
