
Oat-Chocolate Chip-Coconut Patties

Ingredients
- 3/4 cup quick-cooking rolled oats
- 1/2 cup Cuisine Soleil coconut flour
- 2 tbsp baking powder
- 1 pinch of salt
- 1/8 cup black chia seeds
- 1/2 cup sunflower seeds, ground to powder
- 1/2 cup coconut
- 4 eggs
- 1/2 cup margarine
- 3/4 cup maple syrup
- 2tbsp. vanilla
- 1/2 cup milk
- 1 bag of mini white chocolate chips (this can be another kind of chips) or about 1 1/4 mini chips
Preparation
- 1. Mix together the protein all-purpose flour, coconut flour, rolled oats, baking powder, salt, black chia, sunflower seed powder, and shredded coconut.
- 2. In another bowl, combine the eggs, margarine, vanilla, maple syrup and milk.
- 3. Add the liquid ingredient mixture to the dry ingredient mixture.
- 4. Once the mixture is homogeneous, add the chocolate chips and mix until the chips are well distributed in the mixture.
- 5. Place the mixture on a cookie sheet to make about 25 patties and flatten each of your patties so that they are all the same height. Bake for about 20-25 minutes at 375F or until the top is lightly browned.
