Apple muffins

Ingredients

  • Muffin
  • 1/2 cup rolled oats
  • 3tsp. baking powder
  • 1/2tsp. baking soda
  • 1 pinch of salt
  • 1/2 cup sunflower seeds, ground to powder
  • 1/2 cup powdered pumpkin seeds
  • 1/2 cup lightly pressed brown sugar
  • 3 eggs
  • 20ml vanilla
  • 1/2 cup oil
  • 1 cup cow's or plant-based milk
  • Apple Filling
  • 1 tbsp butter or plant-based butter
  • 4 cups diced apples
  • 1/4 cup maple syrup
  • 1/2 tbsp. cinnamon

Preparation

  • 1. Peel the apples and cut them into cubes of about 1cm.
  • 2. In a skillet, melt the butter and add the 4 cups of apples, maple syrup and cinnamon.
  • 3.Cook over low heat for about 15-20 minutes until the apples are slightly tenderized and still diced.
  • 4. Set aside.
  • Important: The filling must have cooled well before incorporating it into the muffin mix.
  • Muffin
  • 1. Mix together the protein all-purpose flour, coconut flour, oatmeal, baking powder, baking soda, salt, sunflower seed powder, and pumpkin seed powder.
  • 2. In another bowl, combine the brown sugar, eggs, vanilla, oil and milk.
  • 3. Add the liquid ingredient mixture to the dry ingredient mixture.
  • 4. Once the mixture is smooth, add the apple filling.
  • 5. Mix gently.
  • 6. Pour into muffin tins.
  • 7. Sprinkle each muffin with large sugar crystals.
