
Banana bread

Ingredients
- 4 eggs
- 1/2 cup oil
- 3/4 cup maple syrup
- 1 1/2 cups cow's or plant-based milk
- 2 cups mashed bananas
- 1 cup chopped dates
- 1 cup Cuisine Soleil oat flour
- 3/4 cup pea protein powder (you can substitute gluten-free flour)
- 3 tbsp. tsp. baking powder
- 1/2 cup chia seeds
- 3/4 cup sunflower seeds, lightly crushed
- 1 pinch of salt
Preparation
- 1. Mix together the buckwheat flour, oat flour, pea protein, baking powder, chia, sunflower seeds and salt.
- 2. In a separate bowl, combine the eggs, maple syrup, oil, milk and mashed bananas.
- 3. Add the liquid ingredient mixture to the dry ingredient mixture.
- 4. Once the mixture is homogeneous, add the chopped dates.
- 5. Pour into loaf pans.
- You can sprinkle the top of your bread with oats before baking.
- Bake at 350 degrees for about 50 minutes. However, it is always best to validate if the bread is cooked in the center before stopping baking!
