Banana bread

Ingredients

  • 4 eggs
  • 1/2 cup oil
  • 3/4 cup maple syrup
  • 1 1/2 cups cow's or plant-based milk
  • 2 cups mashed bananas
  • 1 cup chopped dates
  • 3/4 cup pea protein powder (you can substitute gluten-free flour)
  • 3 tbsp. tsp. baking powder
  • 1/2 cup chia seeds
  • 3/4 cup sunflower seeds, lightly crushed
  • 1 pinch of salt

Preparation

  • 1. Mix together the buckwheat flour, oat flour, pea protein, baking powder, chia, sunflower seeds and salt.
  • 2. In a separate bowl, combine the eggs, maple syrup, oil, milk and mashed bananas.
  • 3. Add the liquid ingredient mixture to the dry ingredient mixture.
  • 4. Once the mixture is homogeneous, add the chopped dates.
  • 5. Pour into loaf pans.
  • You can sprinkle the top of your bread with oats before baking.
  • Bake at 350 degrees for about 50 minutes. However, it is always best to validate if the bread is cooked in the center before stopping baking!
