
Buckwheat Flakes Chocolate Chips Cookies

Ingredients
- 1/4 cup of melted butter
- 1/4 cup of coconut oil
- 2/3 cup of maple syrup
- 1 egg
- 1/2 teaspoon of vanilla
- 1/2 cup of gluten-free all purpose flour mix
- 1/4 cup of coconut flour
- 1/2 teaspoon of baking soda
- 1/4 teaspoon of salt
- 1 1/2 teaspoon of buckwheat flakes
- 1/2 cup of chocolate chips
- 1/4 cup of nuts (Almonds, pecans, etc.)
Preparation
- 1. Preheat the oven at 175°C (350°F).
- 2. In a bowl, beat butter, maple syrup, oil, egg and vanilla until smooth.
- 3. In another bowl, sift all purpose flour mix. Add coconut flour, baking soda, salt, buckwheat flakes and chocolate chips.
- 4. Incorporate dry mixture into wet mixture. Mix with your hands. Do little balls and put them on a buttered baking pan.
- 5. Cook in the oven for about 12 to 15 minutes or until the cookies are well cooked.
- Only use maple syrup. If you use brown sugar, the mixture will be too dry.
