Ingredients
- Pie crust
 - 1¼ cup brown rice flour
 - ¼ cup buckwheat flour
 - 1 teaspoon gluten-free baking powder
 - A pinch of salt
 - 2 tablespoons sugar
 - 3 tablespoons olive oil
 - Water
 - Cheesecake filling
 - ½ package cream cheese
 - ¾ cup sugar
 - 2 eggs
 - 2 tablespoons cream 15% or 35%
 - 1 teaspoon vanilla
 - ½ tablespoon cornstarch
 
Preparation
- 1. Preheat the oven to 350°F, 175°C.
 - 2. For the crust:
 - 3. Mix the dry ingredients in a bowl, then incorporate the fat.
 - 4. Gradually add water until the dough forms a slightly moist, homogeneous ball.
 - 5. Press the dough with your hands into an oiled and floured cake pan. Set aside.
 - 6. Filling:
 - 7. In a bowl, mix all the filling ingredients.
 - 8. Pour the filling into the crust and bake for about 40 minutes.
 - 9. Allow to cool and garnish with strawberries or raspberries.
