Ingredients

  • 1/4 cup quick-cooking rolled oats
  • 1 tsp. baking powder
  • 1 pinch salt
  • 2 eggs
  • 1/2 cup margarine
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup
  • 15 ml vanilla
  • 1 cup pureed bananas
  • 1 cup chocolate chips

Preparation

  • 1. Mix together the flour, oats, baking powder and salt. Set aside.
  • 2. Whisk together the eggs, margarine, brown sugar, maple syrup and vanilla. Then add the mashed bananas and mix.
  • 3. Mix together the dry and liquid ingredients. Once a smooth texture is obtained, add the chocolate chips and mix.
  • 4. Divide the mixture among the muffin cups.
  • 5. Bake for 30 minutes at 350F. Check with a toothpick to make sure the centre is cooked through. If not, add 5 minutes to the cooking time and repeat the toothpick test.
