
Coconut Pecan Cookies

Ingredients
- 1 1/2 cups Cuisine Soleil All-Purpose Flour
- 1/2 cup Cuisine Soleil coconut flour
- 1/2 cup soy protein powder (can be substituted with flour)
- 1tsp. baking soda
- 1 tbsp psyllium
- 1 pinch of salt
- 1/2 cup butter or margarine
- 3/4 cup brown sugar
- 1 cup finely chopped pecans
- 2 eggs
- 1/4 cup cream (this can be dairy-free cream)
- 1 1/4 cups sweetened coconut (+ 1/2 cup to reserve)
Preparation
- 1. Mix together the all-purpose flour, coconut flour, soy protein powder, baking soda, salt, psyllium, coconut, and chopped pecans.
- 2. In another bowl, combine the brown sugar, eggs, butter and cream.
- 3. Add the liquid ingredient mixture to the dry ingredient mixture and mix well.
- 4. Form the mixture into small balls and roll each one in the coconut that had been set aside.
- 5. Place the cookies on a cookie sheet and flatten slightly.
- 6. Bake at 350°F for about 20-25 minutes.
