Coconut Pecan Cookies

Ingredients

  • 1/2 cup soy protein powder (can be substituted with flour)
  • 1tsp. baking soda
  • 1 tbsp psyllium
  • 1 pinch of salt
  • 1/2 cup butter or margarine
  • 3/4 cup brown sugar
  • 1 cup finely chopped pecans
  • 2 eggs
  • 1/4 cup cream (this can be dairy-free cream)
  • 1 1/4 cups sweetened coconut (+ 1/2 cup to reserve)

Preparation

  • 1. Mix together the all-purpose flour, coconut flour, soy protein powder, baking soda, salt, psyllium, coconut, and chopped pecans.
  • 2. In another bowl, combine the brown sugar, eggs, butter and cream.
  • 3. Add the liquid ingredient mixture to the dry ingredient mixture and mix well.
  • 4. Form the mixture into small balls and roll each one in the coconut that had been set aside.
  • 5. Place the cookies on a cookie sheet and flatten slightly.
  • 6. Bake at 350°F for about 20-25 minutes.
