
Date and coconut squares

Ingredients
- 1/2 cup Cuisine Soleil hemp flour
- 3 tsp. baking powder
- 1 cup cocoa
- 3/4 cup crushed sunflower seeds
- 2/3 cup crushed flaxseed
- 1 pinch of salt
- 4 eggs
- 1/2 cup oil
- 30 ml vanilla
- 1/2 cup white sugar
- 2/3 cup water + 1/2 cup water
- 2 cups dates
Preparation
- Date puree
- 1. Cook the dates and 1/2 cup of water over medium heat.
- 2. Use a potato masher to mash the dates coarsely.
- 3. Set aside and let cool.
- Mixing
- 1. Mix together the all-purpose flour, hemp flour, baking powder, cocoa, sunflower seeds, flaxseed, and salt.
- 2. In another bowl, combine the eggs, sugar, oil, vanilla, 2/3 water and cooled date puree.
- 3. Add the liquid ingredient mixture to the dry ingredient mixture and mix.
- 4. Pour into an 8" X 8" pan.
- Bake for about 50 minutes at 350F but it's always advisable to check if the inside of the mixture is cooked through!
