Ingredients

  • Filling
  • 500 grams pitted dates
  • 1 cup hot water
  • Zest of one orange
  •  
  • Base
  • 1 cup finely chopped almonds
  • 1 cup medium to finely chopped almonds
  • 1/2 cup buckwheat flour
  • 1/2 cup
    1/2 cup unsweetened shredded coconut
  • 3/4 teaspoon xanthan gum
  • 3/4 teaspoon guar gum
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 3/4 cup unsalted butter

Preparation

  • 1. Preheat the oven to 375°F (190°C).
  • 2. Grease an 8 x 8 inch baking pan.
  • 3. In a saucepan, mix the dates and hot water, then simmer over low heat until the dates soften and absorb the water.
  • 4. Add the orange zest, remove from heat, and let cool.
  • 5. In a bowl, combine all the dry ingredients.
  • 6. Add the butter in small pieces to create a crumbly dough.
  • 7. Spread 2/3 of the mixture into the prepared pan.
  • 8. Cover the date filling mixture and pour the remaining base mixture over the filling.
  • 9. Bake for about 45 minutes or until golden brown.
  • 10. Remove from the oven and let cool in the pan on a wire rack for 1 hour.
  • 11. Refrigerate for 1 hour before cutting into squares.
