
Oat and blueberry patties

Ingredients
- 3/4 cup quick-cooking rolled oats
- 1/2 cup Cuisine Soleil coconut flour
- 2 tbsp baking powder
- 1 pinch of salt
- 1/8 cup black chia seeds
- 1/2 cup sunflower seeds, ground to powder
- 3/4 cup lightly crushed pecans
- 4 eggs
- 1/2 cup margarine
- 3/4 cup maple syrup
- 1tbsp. vanilla
- 1/2 cup milk (vegetable or cow's)
- 2 cups frozen blueberries
Preparation
- 1. Mix together the protein all-purpose flour, coconut flour, rolled oats, baking powder, salt, black chia, sunflower seed powder, and crushed pecans.
- 2. In another bowl, combine the eggs, margarine, vanilla, maple syrup and milk.
- 3. Add the liquid ingredient mixture to the dry ingredient mixture.
- 4. Once the mixture is homogeneous, add the blueberries and mix gently until the blueberries are well distributed in the mixture.
- 5. Place the mixture on a cookie sheet to make about 25 patties and flatten each of your patties so that they are all the same height. You can sprinkle your patties with large sugar crystals for a little sweet addition! Bake for about 25 minutes at 375F or until the top is lightly browned.
