Ingredients

  • 1 1/4 gluten-free rolled oats
  • 1 c. teaspoon baking powder
  • 1/2 c. teaspoon baking soda
  • 1/2 c. teaspoon salt
  • 2 eggs
  • 1/2 cup margarine
  • 3/4 cup brown sugar
  • 1/2 c. tablespoon vanilla
  • 3/4 cup chocolate chips
  • 1/2 cup lightly chopped salted cashews

Preparation

  • 1. Mix together the flour, oats, baking powder, baking soda, and salt. Set aside.
  • 2. Whisk together the eggs, margarine, brown sugar and vanilla.
  • 3. Mix together the dry and liquid ingredients to obtain a homogeneous texture.
  • 4. Add the chocolate chips and mix.
  • 5. Using a spoon, place a small amount of the mixture on a cookie sheet, spacing each patty about 2 inches apart since each patty will double its width as it cooks.
  • 6. Flatten each patty to sprinkle the chopped cashews.
  • 7. Heat the oven to 300F and bake for about 20 minutes.
