Soft chocolate chip cookies – “Subway” style

Ingredients

  • 1 1/2 c. tea baking powder
  • 1 tsp. baking soda
  • 1 tsp. cornstarch
  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • 2 eggs
  • 1 c. vanilla tea
  • 1/2 cup vegetable butter
  • Pinch of salt
  • 1 cup dark or milk chocolate chips
  • 1/2 cup dark or milk chocolate chips

  • Variation for the chocolate chips: 1/2 dark chocolate chips, 3/4 dulce de leche chocolate chips and 3/4 crushed white chocolate.

Preparation

  • 1. Mix together flour, baking powder, baking soda, cornstarch and salt in a bowl. Book
  • 2. Cream together brown sugar, sugar, eggs, vanilla and butter in a large bowl until light and fluffy.
  • 3. Mix the liquid ingredients with the dry ingredients until smooth and pale in color.
  • 4. Add the pastilles and chocolate chips and mix well.
  • 5. Place 6 cookies per baking sheet, spacing them out.
  • 6. Bake for about 13 minutes or until lightly browned on top. Don't wait until the top is completely golden, as the cookies will become crisp. When barely golden, the cookies will remain soft.
