
Yellow pea croquettes with corn

Ingredients
- 1/2 cup Cuisine Soleil yellow pea flour
- 2 tsp. baking powder
- 2 eggs, beaten
- 3/4 cup milk
- 1 cup cooked or thawed corn kernels
- 1 grated zucchini with skin
- 1 carrot, grated with peel
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped green onion
- 1 tbsp. olive oil
- Salt and pepper to taste
Preparation
- 1. In a large bowl, whisk together the milk and eggs.
- 2. Gradually add the flours, finishing with the baking powder. Mix until the dough is smooth.
- 3. Add the corn, zucchini and carrot, cheese and green onion. Season with salt and pepper to taste.
- 4. In a large skillet, heat the oil over medium heat. Place about 60 ml (1/4 cup) of preparation per kibble. Flatten slightly with a spoon. Cook for about 3 minutes on each side or until the croquettes are golden brown. Add oil as needed.
