Lime Coconut Squares

Ingredients

  • Crust
  • 3/4 cup buckwheat flakes
  • 1/4 cup toasted coconut flakes
  • 1/4 cup sugar
  • 3 tablespoons coconut oil
  • Pinch of salt

  • Filling
  • 4 eggs
  • 3/4 cup sugar
  • 1/4 cup coconut flakes
  • 1/2 cup lime juice plus zest of 2 limes
  •  
  • Crumble
  • 1/4 cup oil
  • 1/4 cup buckwheat flakes
  • 1/4 cup toasted coconut flakes
  • Zest of 1 lime

Preparation

  • Crust
  • 1. Preheat the oven to 350°F (175°C).
  • 2. Mix all the ingredients in a bowl, then press firmly into a square pan of about 9 inches (23 cm). Bake for 25 to 30 minutes until golden brown, then remove from the oven and reduce the temperature to 300°F (150°C).

  • 1. Mix all the ingredients in a bowl, then pour over the crust and bake for 20 minutes.

  • Crumble
  • 1. Mix all the ingredients in a bowl, then sprinkle over the square and bake for 10 minutes. Let cool for 1 hour before serving.
