Ingredients

  • Pie crust
  • 1 teaspoon gluten-free baking powder
  • A pinch of salt
  • 2 tablespoons sugar
  • 3 tablespoons olive oil
  • Water

  • Cheesecake filling
  • ½ package cream cheese
  • ¾ cup sugar
  • 2 eggs
  • 2 tablespoons cream 15% or 35%
  • 1 teaspoon vanilla
  • ½ tablespoon cornstarch

Preparation

  • 1. Preheat the oven to 350°F, 175°C.
  • 2. For the crust:
  • 3. Mix the dry ingredients in a bowl, then incorporate the fat.
  • 4. Gradually add water until the dough forms a slightly moist, homogeneous ball.
  • 5. Press the dough with your hands into an oiled and floured cake pan. Set aside.
  • 6. Filling:
  • 7. In a bowl, mix all the filling ingredients.
  • 8. Pour the filling into the crust and bake for about 40 minutes.
  • 9. Allow to cool and garnish with strawberries or raspberries.
