Oat Raspberry Muffins with Maple Crumble

  • 1 cup quick-cooking rolled oats
  • 3/4 cup brown sugar
  • 2 tsp. baking powder
  • 1 pinch salt
  • 1/2 cup milk
  • 1/3 cup melted butter
  • 2 eggs
  • 1 1/2 cups fresh or frozen raspberries

  • Crumble
  • 1/2 cup quick-cooking rolled oats
  • 1/4 cup brown sugar
  • 1/8 cup butter
  • 1/8 cup maple syrup

Preparation

  • Muffin
  • 1. Mix together the all-purpose mix, oatmeal, oatmeal, brown sugar, baking powder, and salt. Set aside.
  • 2. Mix together the milk, butter and eggs.
  • 3. Mix the dry ingredients with the liquid ingredients together until you get a homogeneous mixture.
  • 4. Add the raspberries, stirring gently.
  • 5. Pour into muffin cups.

  • Crumble
  • 1. Mix together the oats, brown sugar, butter and maple syrup.
  • 2. Fluff the crumble over the muffins.
  • 3. Bake for 25 minutes at 350F. Always check the center of the muffins with a toothpick. If the center doesn't seem cooked, add 5-minute slices of cooking.
