Ingredients

  • 1 cup rolled oats
  • 3/4 cup pea protein (can be substituted with flour)
  • 3 tbsp.s baking powder
  • 3/4 cup white chocolate chips
  • 1 pinch of salt
  • 3 eggs
  • 3/4 cup maple syrup
  • 1/3 cup oil
  • 15ml vanilla
  • 300ml crushed strawberries (they will become liquid)

Preparation

  • 1. Mix together the all-purpose flour, oat, rolled oats, pea protein, baking powder, and salt.
  • 2. In another bowl, combine the eggs, maple syrup, oil, vanilla and crushed strawberries.
  • 3. Add the liquid ingredient mixture to the dry ingredient mixture.
  • 4. Once the mixture is smooth, add the chocolate chips.
  • 5. Pour into muffin cups.
  • Bake in a convection oven at 350F for 20 minutes.
