
Banana, Blueberry and Coconut Bread

Ingredients
- 1/2 cup Cuisine Soleil oatmeal
- 1/2 cup sweetened shredded coconut
- 1 c. tablespoon baking powder
- 1 pinch of salt
- 1/4 cup coconut sugar
- 1/4 cup oil
- 3 eggs
- 15 ml vanilla
- 1/2 cup maple syrup
- 1 cup bananas, mashed with a fork
- 1 cup blueberries (frozen or fresh)
Preparation
- 1. Mix together the all-purpose protein flour, oat flour, shredded coconut, baking powder, coconut sugar and salt.
- 2. In a separate bowl, combine the maple syrup, eggs, vanilla, oil and mashed bananas.
- 3. Add the liquid ingredient mixture to the dry ingredient mixture.
- 4. Mix until well combined.
- 5. Pour into a greased and floured 9 x 5" baking pan.
- 6. Scatter the blueberries over the top of the mixture.
- 7. Bake at 375F for 1 hour 30 minutes (Validate if the center is cooked through. If not, add 10-minute baking slices.)
- 8. Let cool before removing from the pan.
