Ingredients

  • 4 eggs
  • 75 g brown sugar
  • 115 g cornstarch or tapioca flour
  • 7 g gluten-free baking powder
  • 2 tablespoons orange blossom water
  • 150 g butter
  • Pinch of salt
  • 3 squares of 70% chocolate
  • 5 tablespoons water

Preparation

  • 1. Preheat the oven to 400°F (200°C).
  • 2. In a bowl, mix the eggs and brown sugar, then add the flour, cornstarch, and baking powder.
  • 3. Incorporate the butter, orange blossom water, and salt.
  • 4. Mix the preparation well and set aside.
  • 5. In a saucepan, pour the water and chocolate, then stir.
  • 6. As soon as the mixture becomes smooth, stop the heat and let the chocolate melt gently in the saucepan.
  • 7. In another bowl, mix half of the first preparation with the melted chocolate.
  • 8. Grease madeleine molds. Arrange the batter by alternating the plain mixture and the chocolate mixture.
  • 9. Bake in the oven for about 10 minutes or until the madeleines are golden brown.
