Ingredients
- 4 eggs
- 75 g brown sugar
- 115 g brown rice flour
- 115 g cornstarch or tapioca flour
- 7 g gluten-free baking powder
- 2 tablespoons orange blossom water
- 150 g butter
- Pinch of salt
- 3 squares of 70% chocolate
- 5 tablespoons water
Preparation
- 1. Preheat the oven to 400°F (200°C).
- 2. In a bowl, mix the eggs and brown sugar, then add the flour, cornstarch, and baking powder.
- 3. Incorporate the butter, orange blossom water, and salt.
- 4. Mix the preparation well and set aside.
- 5. In a saucepan, pour the water and chocolate, then stir.
- 6. As soon as the mixture becomes smooth, stop the heat and let the chocolate melt gently in the saucepan.
- 7. In another bowl, mix half of the first preparation with the melted chocolate.
- 8. Grease madeleine molds. Arrange the batter by alternating the plain mixture and the chocolate mixture.
- 9. Bake in the oven for about 10 minutes or until the madeleines are golden brown.
