Lime Coconut Squares

Ingredients
- Crust
- 3/4 cup buckwheat flakes
- 1/4 cup toasted coconut flakes
- 1/4 cup sugar
- 3 tablespoons coconut oil
- Pinch of salt
- Filling
- 4 eggs
- 3/4 cup sugar
- 1/3 cup Cuisine Soleil coconut flour
- 1/4 cup coconut flakes
- 1/2 cup lime juice plus zest of 2 limes
- Crumble
- 1/4 cup oil
- 1/4 cup buckwheat flakes
- 1/4 cup toasted coconut flakes
- Zest of 1 lime
Preparation
- Crust
- 1. Preheat the oven to 350°F (175°C).
- 2. Mix all the ingredients in a bowl, then press firmly into a square pan of about 9 inches (23 cm). Bake for 25 to 30 minutes until golden brown, then remove from the oven and reduce the temperature to 300°F (150°C).
- Filling
- 1. Mix all the ingredients in a bowl, then pour over the crust and bake for 20 minutes.
- Crumble
- 1. Mix all the ingredients in a bowl, then sprinkle over the square and bake for 10 minutes. Let cool for 1 hour before serving.
