Oatmeal and chocolate chip patty
Ingredients
1 1/4 gluten-free rolled oats
1 c. teaspoon baking powder
1/2 c. teaspoon baking soda
1/2 c. teaspoon salt
2 eggs
1/2 cup margarine
1/2 cup brown sugar
1/4 cup sugar
1/2 c. tablespoon vanilla
3/4 cup chocolate chips
Preparation
1. Mix together the flour, oats, baking powder, baking soda, and salt. Set aside.
2. Whisk together the eggs, margarine, brown sugar, sugar and vanilla.
3. Mix together the dry and liquid ingredients to obtain a homogeneous texture.
4. Add the chocolate chips and mix.
5. Using a spoon, place a small amount of the mixture on a cookie sheet, spacing each patty about 2 inches apart since each patty will double its width as it cooks.
6. Heat the oven to 300F and bake for about 18 minutes.
