ORANGE CAKE RECIPE

Ingredients
- 2 cups of brown rice flour
- 1 tablespoon of arrowroot
- 1 pinch of salt
- 1 tsp. of gluten-free baking powder
- 1/3 cup of grape seed oil
- 1¼ cup of dates
- 1½ cup of almond milk
- 1 tbsp. of apple cider vinegar
- 2 tbsp. of orange juice
- Orange zest
Preparation
- Soak dates on 1 cup of warm almond milk for 10 minutes.
- Preheat oven at 162°C, 325°F.
- Mix dry ingredients together. Add the oil. Mix well.
- When dates are soft, Add them to the food processor and make a puree.
- In a bowl, mix humid ingredients including the reminder of the almond milk (3/4 cup) and the orange zest.
- Slowly incorporate dry ingredients to the wet mixture.
- Grease a pan and pour batter into the prepared pan.
- Bake for 40 to 45 minutes, less if you use muffin pan.
- Let it cool of at room temperature.
