Ingredients
- 100g cornstarch
- 20g psyllium
- 1 1/2tbsp. white sugar
- 1/2tsp. salt
- 1 tbsp oil
- 8g instant yeast (or a sachet)
- 500ml water
- 1 tbsp brown sugar
Preparation
- 1. Heat the 500ml of water to 40°C.
- 2. In a small bowl, pour the instant yeast, traditional yeast, brown sugar and about 125-150ml of water.
- 3. Set aside and let the mixture swell by double. This will confirm that the yeast is activated for your preparation.
- 4. Mix together the all-purpose flour, oatmeal, cornstarch, psyllium, white sugar, and salt.
- 5. Pour your dry ingredients into the bowl of your stand mixer (you need to use the dough hook).
- 6. Add the swollen yeast and the remaining water.
- 7. Blend for 4-5 minutes or until the mixture is homogeneous.
- 8. Add the oil and mix again for 1-2 minutes.
- Instructions for making your rolls
- 1. Flour your hands.
- 2. Take a portion of the mixture, about the size of a small orange, and shape into a ball. It is possible to sprinkle the dough with flour so that it does not stick to your hands.
- 3. Repeat the same step for the rest of the mixture. You will get about 10 balls.
- 4. Lightly oil each of the balls.
- 5. Bake at 400°F for about 35-40 minutes, adding a source of moisture to your oven (a small bowl of water for example).
