Ingredients
- 1/2 cup Cuisine Soleil oat flour
- 1 cup rolled oats
- 3/4 cup pea protein (can be substituted with flour)
- 3 tbsp.s baking powder
- 3/4 cup white chocolate chips
- 1 pinch of salt
- 3 eggs
- 3/4 cup maple syrup
- 1/3 cup oil
- 15ml vanilla
- 300ml crushed strawberries (they will become liquid)
Preparation
- 1. Mix together the all-purpose flour, oat, rolled oats, pea protein, baking powder, and salt.
- 2. In another bowl, combine the eggs, maple syrup, oil, vanilla and crushed strawberries.
- 3. Add the liquid ingredient mixture to the dry ingredient mixture.
- 4. Once the mixture is smooth, add the chocolate chips.
- 5. Pour into muffin cups.
- Bake in a convection oven at 350F for 20 minutes.
