  • 1. In a bowl, combine the flour, starch and salt. Set aside.
  • 2. In a separate bowl, whisk the eggs and brown sugar for 5 minutes until they whiten, form a ribbon and triple in size. Gradually whisk in the oil. Using a spatula, stir in the dry ingredients, alternating with the milk until the mixture is moistened (a few lumps of flour will remain). Let stand for 10 minutes.
  • 3. Preheat the waffle iron. Pour in about 250 ml (1 cup) of batter at a time (for two waffles) and close the unit (or according to the manufacturer's recommendations). Cook for 5 minutes or until golden brown. Keep warm. Repeat with the rest of the dough.
