1. Preheat the oven to 400°F (200°C).
2. In a bowl, mix the millet flour and sugar.
3. In another bowl, beat the 8 eggs. Incorporate into the dry mixture and gently stir.
4. Add 1 large pinch of salt and the finely chopped zest of 2 lemons.
5. Incorporate the warm milk and mix well.
6. Pour the mixture into small buttered molds.
7. Bake for about 25 to 35 minutes.
