Vegan Apple Muffins

Ingredients
- ¾ cup buckwheat flour
- ½ cup brown rice flour
- ¼ cup tapioca flour
- 1½ teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon xanthan gum
- 1 teaspoon cinnamon
- ½ teaspoon allspice
- 1 cup unsweetened applesauce
- 1/3 cup extra virgin olive oil
- 1 cup brown sugar
- 2 teaspoons vanilla extract
- 1 tablespoon egg substitute with 1/4 cup warm water or 2 eggs
- 4 tablespoons apple juice
- 1½ cups peeled and diced apples
- ½ cup walnuts or pecans
Preparation
- 1. Preheat the oven to 350°F (175°C).
- 2. In a bowl, mix the buckwheat flour, brown rice flour, tapioca flour, baking powder, baking soda, salt, xanthan gum, cinnamon, and allspice. Set aside.
- 3. Add the wet ingredients except for the apples and nuts, then beat with a blender until smooth. If the mixture is too thick, add a little apple juice.
- 4. Gently fold in the apples and nuts.
- 5. Spoon the batter into 12 muffin cups and sprinkle with brown sugar.
- 6. Bake for about 20-25 minutes. Check for doneness with a toothpick inserted in the center.
- 7. Remove the muffins from the cups and cool on a wire rack.
