Ingredients :

1/4 cup of melted butter
1/4 cup of coconut oil
2/3 cup of maple syrup
1 egg
1/2 teaspoon of vanilla
1/2 cup of gluten-free all purpose flour mix
1/4 cup of coconut flour
1/2 teaspoon of baking soda
1/4 teaspoon of salt
1 1/2 teaspoon of buckwheat flakes
1/2 cup of chocolate chips
1/4 cup of nuts (Almonds, pecans, etc.)

Préparation :

Preheat the oven at 175°C (350°F).

In a bowl, beat butter, maple syrup, oil, egg and vanilla until smooth.

In another bowl, sift all purpose flour mix. Add coconut flour, baking soda, salt, buckwheat flakes and chocolate chips.

Incorporate dry mixture into wet mixture. Mix with your hands. Do little balls and put them on a buttered baking pan.

Cook in the oven for about 12 to 15 minutes or until the cookies are well cooked.

*Note : Only use maple syrup. If you use brown sugar, the mixture will be too dry.
