  • 2 ripe bananas
  • ¼ cup almond butter
  • ¼ cup maple syrup
  • ¼ cup unsweetened almond milk
  • 2 tablespoons coconut oil
  • ½ teaspoon vanilla extract
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¼ cup dark chocolate chips

Preparation

  • 1. Preheat the oven to 350°F (175°C).
  • 2. Using a food processor, blend the bananas, almond butter, maple syrup, unsweetened almond milk, coconut oil, and vanilla extract. Set aside.
  • 3. In a bowl, mix the brown rice flour, baking powder, and salt.
  • 4. Fold the wet mixture into the dry mixture. Mix lightly.
  • 5. Add the chocolate chips.
  • 6. Grease 12 muffin cups, then fill with the batter.
  • 7. Bake for approximately 20-25 minutes.
