Millet and Buckwheat Banana Bread

Ingredients

  • 3 ripe bananas, mashed
  • 3 tbsp. of coconuts beverage, almond milk or organic milk
  • 6 tbsp. of butter
  • ½ cup of brown sugar
  • ½ cup of buckwheat flour
  • ½ cup of millet flour
  • 2/3 cup of tapioca flour
  • ½ tsp. of baking soda

Preparation

  • 1. Preheat the oven at 180? (350°F)
  • 2. In a bowl, mix the butter, sugar, bananas and milk until smooth.
  • 3. In another bowl, mix together buckwheat flour, millet flour, baking soda and tapioca flour.
  • 4. Add the dry mixture to the banana mixture and mix slowly.
  • 5. Place the batter into a greased loaf pan.
  • 6. Bake for 55 minutes.
