Millet and buckwheat banana bread

Ingredients

3 ripe bananas, mashed
3 tbsp. of coconuts beverage, almond milk or organic milk
6 tbsp. of butter
½ cup of brown sugar
½ cup of buckwheat flour
½ cup of millet flour
2/3 cup of tapioca flour
½ tsp. of baking soda

Directions

  1. Preheat the oven at 180? (350°F)
  2. In a bowl, mix the butter, sugar, bananas and milk until smooth.
  3. In another bowl, mix together buckwheat flour, millet flour, baking soda and tapioca flour.
  4. Add the dry mixture to the banana mixture and mix slowly.
  5. Place the batter into a greased loaf pan.
  6. Bake for 55 minutes.
