Spinach Flatbread

Ingredients

  • 3 tablespoons ground flaxseed
  • 3 cups fresh spinach
  • ½ cup water
  • 2/3 cup millet flour
  • 1 teaspoon salted herbs
  • ¼ teaspoon dried thyme and basil

Preparation

  • 1. Preheat oven to 350ºF
  • 2. Mix flaxseed with water, set aside to form a gel.
  • 3. In a food processor, combine spinach, water, salted herbs, herbs and flax seed gel until smooth.
  • 4. Add flour and mix well until you get a smooth paste.
  • 5. Spread evenly on a large baking sheet lined with parchment paper.
  • 6. Bake for about 15 minutes.
  • 7. Cut into squares for a sandwich or into rounds for a hamburger bun!
