Vegan Apple Muffins

Ingredients

  • ¼ cup tapioca flour
  • 1½ teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon xanthan gum
  • 1 teaspoon cinnamon
  • ½ teaspoon allspice
  • 1 cup unsweetened applesauce
  • 1/3 cup extra virgin olive oil
  • 1 cup brown sugar
  • 2 teaspoons vanilla extract
  • 1 tablespoon egg substitute with 1/4 cup warm water or 2 eggs
  • 4 tablespoons apple juice
  • 1½ cups peeled and diced apples
  • ½ cup walnuts or pecans

Preparation

  • 1. Preheat the oven to 350°F (175°C).
  • 2. In a bowl, mix the buckwheat flour, brown rice flour, tapioca flour, baking powder, baking soda, salt, xanthan gum, cinnamon, and allspice. Set aside.
  • 3. Add the wet ingredients except for the apples and nuts, then beat with a blender until smooth. If the mixture is too thick, add a little apple juice.
  • 4. Gently fold in the apples and nuts.
  • 5. Spoon the batter into 12 muffin cups and sprinkle with brown sugar.
  • 6. Bake for about 20-25 minutes. Check for doneness with a toothpick inserted in the center.
  • 7. Remove the muffins from the cups and cool on a wire rack.
